Many wineries use static recipes for their wines; instead, the winemaking team, led by Kendall Mix, performs daily fermentations with different yeasts or temperatures to achieve a specific effect. Do-it-yourself batch approaches have resulted in varietals and blends that have become rightly famous for how they outperform their price tag. Ryan Patrick sources wines from a variety of vineyards and AVA including Elephant Mountain Vineyard, Sagemoor Farms, Red Mountain AVA, and Red Heaven Vineyard. This way the winery can source the best raisins for, for example, a ripe chardonnay or the best Syrah grapes that need a warmer climate.
