Optimal soils The gravelly soils warm up quickly in the spring, retaining and radiating heat, helping late-ripening grapes like Cabernet Sauvignon achieve balanced ripeness. Merlot thrives on the clay-limestone soils, giving a fresh, velvety expression that counterbalances the more powerful and tannic Cabernet Sauvignon. Traditional winemaking techniques After manual harvesting, rigorous hand sorting and de-stemming, the grapes from the Domaine Fabre estates are vinified in temperature-controlled stainless steel for the Merlot and Cabernet, while the muscular Petit Verdot is fermented in oak.
