In 1990, Denis Pommier took over his grandparents' two hectares of vines. Thirty years later, this organic estate covers 14 hectares in Petit Chablis and Chablis, including three Premier Crus, as well as a plot of Pinot noir. Here, it is the terroir that dictates the method of vinification, sometimes in barrels but more often in vats. The maturation on fine lees is prolonged to gain in volume and complexity, which notably allows to reduce the doses of sulfur and with indigenous yeasts.
