"Respect for the terroir Florence and Simon's Burgundies are best described by the expression: what you see is what you get. Their Gevrey has the intense aromas of its origins; the Morey-St-Denis, with its complex aromas of red and black fruits, exudes the perfection of the parcel from which it comes. It is pure nature that is offered to us to drink. Well thought-out wines Innovative, patient and extraordinarily meticulous, Florence imposes a slow and precise work on the estate. In the vineyard as well as in the cellar, reflection takes precedence over action. With Simon, she has implemented organic farming, with gradual conversion to biodynamic farming. Before the harvest, the vines are de-budded and leafed out early to better control the yields. They carry out the bottling according to the biodynamic calendar, in the manner of the Cistercian monks who cultivated Burgundy. The result: precious and rare wines, slow to make and produced for aging. Even further It was Florence's grandfather, Jan Heresztyn, who started the estate. Driven by the crisis of the 1930s to look for work outside of Poland, he settled in Gevrey-Chambertin, a charming village in the Côte-d'Or, where he acquired four hectares of vines, one parcel at a time. His sons, Stanislas and Bernard, then turned the modest farm into Domaine Heresztyn.
